These are called "quick-cheat Italian scones" because there really is no cooking required, only stress-free eating! It's a matter of assemble, grill and enjoy. I use good quality, bakery-bought butter scones that can be stashed in the freezer and are ready at a moment's notice!

These scones are absolutely delicious as breakfast or served with tea and you can whip them up in minutes. Of course, you can bake your own scones but this "recipe" is all about stress-free eating! Here's what to do:
Ingredients:
Bakery-bought butter scones, as many as you need and depending on how much you make
3 tbsp butter, melted
1/4 tsp dried oregano
Tomatoes, sliced
Mozzarella, grated
Fresh oregano
Method:
Using a sharp knife, halve the scones. If you're using frozen scones, allow them to thaw completely.
Melt the butter and dried oregano together. Using a kitchen brush, generously butter the scones.
Slice tomatoes into slices of about 0.5mm thick. Lay onto the scone halves.
Generously pile on the grated mozzarella.
Grill gently until the cheese is melted and the scones are warm through. This only takes about 6-7 minutes.
Sprinkle with fresh oregano. If you only have dried oregano, use it!
Serve warm.
